how to make mezcal
Steps-
1. piña core harvested (more than 28 types of agave)
2. put piñas around into the large fire conical pit where the fire is in the center
3. roast them for 3-4 days -breaks down the sugar- prepare them to be fermented *unique smoked flavor because of the wood fire and lava stones
4. crashed them with a stone wheel called tahona and juices are extracted.
5. distill the juice
6. aged inside the oak barrel
small scale mezcal distilleries called palenques
location, climate and soil affect mezcal's flavor
it is consumed in several occasşons like parties or funerals
