how to make tequila

Steps-

1. agave tequilana (blue agave) piña core harvested
2. split down two in the field
3. remove the cylinder part in the heart (not to become waxy) 
4. steam it in the clay/industrial oven
5. extract the juice (leftover fibers are used as biomass)
6. fermentation
7. distillation (at least 2 times)
8. aged inside oak barrels




Differences between tequila and mezcal

Tequila is technically a mezcal, however, there are differences in production technique and in the types of agave used."

mezcal - smoky flavor + taste sweeter
mezcal - types of gave + ground pit + cooked with lava rock and wood / Oaxaca
tequila - a single type of agave plant – the agave tequilana (blue agave) + above-ground oven + steaming / Jalisco
