Behavior or Process? In our previous talks, I realized we are focusing on the behavior of agave, especially in nature. On the other hand in the brief agave plant has its place in society with its usage. Usage or let's say outcome of it is the dialogue between society. So as a second option maybe this house is giving the experience of the process of the agave that comes from very irrelevant pieces of its with very irrelevant usage of it. Where mezcal made from is not where the needle comes from or where pulque is come from is not the same where you extract soap. So all of these different "outcomes" belongs to the different part of agave (or different process of agave) but they are whole or becoming whole to create agave plant. It is reverse thinking.  How can a house grow? - all senses to enjoy the house - PROCESS - PHASE - PIECES (NOT LAYERING) - experience a house with its pieces of falling apart -

Tequila piña  - where sugary nectar is. this nectar can be also extracted to be used as a sugar substitute. how to make tequila Steps- 1.  agave tequilana (blue agave)   piña core harvested 2. split down two in the field 3. remove the cylinder part in the heart (not to become waxy)  4. steam it in the clay/industrial oven 5. extract the juice (leftover fibers are used as biomass) 6. fermentation 7. distillation (at least 2 times) 8. aged inside oak barrels Differences between tequila and mezcal "  Tequila  is technically a mezcal, however, there are differences in production technique and in the types of agave used." mezcal - smoky flavor + taste sweeter mezcal - types of gave + ground pit + cooked with lava rock and wood / Oaxaca tequila -  a single type of agave plant – the agave tequilana (blue agave) +  above-ground oven + steaming / Jalisco differences_01 differences_02

Mezcal piña  - where sugary nectar is. this nectar can be also extracted to be used as a sugar substitute. how to make mezcal Steps- 1.  piña core harvested (more than 28 types of agave) 2. put  piñas around  into the large fire conical pit where the fire is in the center 3. roast them for 3-4 days -breaks down the sugar- prepare them to be fermented      *unique smoked flavor because of the wood fire and lava stones 4. crashed them with a stone wheel called tahona and juices are extracted. 5. distill the juice 6. aged inside the oak barrel small scale mezcal distilleries called palenques location, climate and soil affect mezcal's flavor it is consumed in several occasşons like parties or funerals "t ómalo  con besos"  -  "drink it with kisses"
